Pumpkin Pie Pudding

Ingredients

 1 15-oz. can pumpkin

1 cup canned coconut milk

3/4 cup stevia

1/2 cup biscuit baking mix

2 eggs, beaten

2 tablespoons butter, melted

2 1/2 tablespoons pumpkin pie spice

2 teaspoons vanilla extract

Topping:  whipped cream

 

Instructions:  In a bowl, mix together all ingredients except topping. Transfer to a slow cooker (crock-pot) that has been sprayed with non-stick vegetable spray.  Cover and cook on low setting for 3 1/2 to 4 hours. Pudding will start to pull away from sides of slow cooker.  To test for doneness  insert a toothpick in the center.  The toothpick will come out clean when pudding is done.  Serve warm, topped with a dollop of whipped cream.

 


Strawberry Torte

Ingredients:

2 (5.3-oz.) Organic Greek Plain low-fat yogurt
3 tablespoons raw honey
1 (16-oz.) container fresh strawberries, sliced
2 tablespoons stevia
4 frozen phyllo sheets, thawed
Olive oil cooking spray
1 teaspoon stevia
Garnishes: mint sprigs, sliced strawberries

Instructions: Mix yogurt and honey, cover and chill until ready to serve.  Combine strawberry slices and 2 tbsp stevia, cover and chill until ready to serve.  Place 1 phyllo sheet on a flat work surface, coat with cooking spray and sprinkle evenly with 1/4 tsp stevia.  Place 1 phyllo sheet on top of existing phyllo sheet, coat with cooking spray and sprinkle evenly with 1/4 tsp stevia.  Cut the phyllo stack into thirds lengthwise. Cut each third into half creating 6 even rectangular stacks.  Repeat this process with the two remaining phyllo sheets.  Grill the 12 phyllo stacks, without grill lid, over medium-low heat (300 – 350 degrees) 1  to 2 minutes on each side until lightly brown.  Place 1 grilled phyllo stack on each 6 serving plates.  Top evenly with strawberry slices.  Drizzle each stack evenly with yogurt sauce (only use half of the yogurt sauce).  Top each with 1 grilled phyllo stack.  Top evenly with remaining strawberries and yogurt sauce. Garnish with mint sprigs and strawberries and serve immediately.  6 servings.
