1 can of Albacore tuna in water
2 chopped boiled eggs
1/3 cup of Just Mayo
1/3 cup finely chopped onion
1 cup of shredded zucchini
1/2 cup of shredded carrots
1 bunch of collard green leafs
Combine tuna, boiled eggs, mayo, and onion in a bowl. Stir until well mixed. Lay a single collard green leaf out flat, place a row of tuna mixture in center of the leaf. Sprinkle shredded zucchini and carrots on top and roll leaf up.
Note: You can put the salsa inside the roll before you roll it up or you can dip the roll in the salsa while you eat it. Makes 4-6 rolls.
