“Take Control of Your Health Naturally”

Vegetable Chips

Most of us can sit down and eat a whole bag of potato chips.  Why not try a healthier alternative that tastes just as good?  This recipe can be done with several vegetables!  It is especially easy with root vegetables such as Turnips, Squash, Sweet Potatoes, Radishes, Parsnips, Carrots, Rutabagas, Zucchini, and beets.

First wash the veggie really well.  Slice about 1/16-inch thick.  If you like your chips a little thicker, just add a few minutes to the cooking time.  Place vegetables on paper towels and sprinkle lightly with salt on both sides. Let vegetable chips rest for 20 to 30 minutes, most of the liquid should be released. Then, rinse them in cold water and dry.  This should extract all of the liquid so they will cook properly.

Place vegetable slices out on baking sheet and lightly coat with extra virgin olive oil or coconut oil.  Bake 40 to 50 minutes, flipping if needed. Place cooked chips on paper towels to cool and season lightly with sea salt.   Feel free to add some of your favorite spices such as dill, pepper, etc.
